Cheesy Broccoli And Rice Bake Recipe

Ingredients:
🔸️200g (1 cup) uncooked long-grain rice
🔸️500ml (2 cups) vegetable or chicken stock
🔸️1 head of broccoli, cut into small florets
🔸️2 tbsp unsalted butter
🔸️1 small onion, finely chopped
🔸️2 cloves garlic, minced
🔸️2 tbsp plain flour
🔸️250ml (1 cup) milk
🔸️150ml (¾ cup) single cream
🔸️150g (1 ½ cups) grated cheddar cheese, divided
🔸️50g (½ cup) grated cheese
🔸️1 tsp mustard
🔸️Salt and black pepper to taste


Instructions:
🔸️ Rinse the rice thoroughly and cook it in the vegetable or chicken stock according to the package instructions. Set aside.
🔸️ While the rice cooks, steam the broccoli florets for 3-4 minutes until just tender but still bright green. Set aside.
🔸️ In a large pan, melt the butter over medium heat. Add the onion and garlic, and sauté for 3-4 minutes until softened.
🔸️ Stir in the flour and cook for 1 minute. Gradually whisk in the milk and cream, cooking until the sauce thickens.
🔸️ Add 100g of the cheddar and the Parmesan cheese, stirring until melted. Mix in the Dijon mustard and season with salt and pepper.
🔸️ Preheat your oven to 180°C.
🔸️ In a large mixing bowl, combine the cooked rice, steamed broccoli, and cheese sauce. Mix well to coat everything evenly.
🔸️ Transfer the mixture to a greased baking dish. Top with the remaining cheddar cheese and breadcrumbs for a golden, crispy finish.
🔸️ Bake in the preheated oven for 20-25 minutes, or until the top is bubbling and golden.
🔸️ Let the bake cool for 5 minutes before serving. Pair it with a fresh salad or crusty bread for a complete meal.
