Ingredients:
🔸️ 4 boneless, skinless chicken breasts
🔸️ 100g (1 stick) unsalted butter
🔸️ 2 tbsp fresh parsley
🔸️ 1 tbsp fresh dill
🔸️ 1 tbsp lemon juice
🔸️ 1 tbsp tomato paste
🔸️ Salt and pepper
🔸️ 2 large eggs
🔸️ 100g (¾ cup) all-purpose flour
🔸️ 150g (1½ cups) breadcrumbs
🔸️ Vegetable oil for frying
Instructions:
🔸️ Combine the softened butter with minced garlic, parsley, dill (if using), lemon juice, salt, and pepper in a bowl. Shape the mixture into a log using plastic wrap or parchment paper, and refrigerate for at least 30 minutes until it solidifies.
🔸️ Place each chicken breast between two sheets of plastic wrap or parchment paper. Gently pound with a meat mallet until it's about ½ inch thick, being careful not to tear the chicken.
🔸️ Remove the butter log from the fridge and cut it into 4 equal pieces. Place one piece of butter in the center of each flattened chicken breast. Fold the sides over the butter and tightly roll the chicken into a log shape. Use toothpicks to secure the edges and prevent any butter from leaking during cooking.
🔸️ Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs. First, coat each chicken roll in flour, shaking off the excess. Then, dip it in the egg wash and coat with breadcrumbs. For extra crispiness, repeat the egg and breadcrumb coating.
🔸️ Heat vegetable oil in a deep-frying pan or skillet over medium heat, ensuring the oil is about 2 inches deep. Fry the chicken rolls for 8-10 minutes, turning occasionally, until golden brown on all sides. Make sure the internal temperature reaches 75°C.
🔸️ To ensure the chicken is fully cooked without burning the crust, transfer the fried chicken rolls to a preheated oven at 180°C (350°F) for 10-15 minutes.
🔸️ Remove the toothpicks and let the chicken rest for a few minutes before serving. The butter inside should be melted and slightly oozing when sliced.
