Classic Roasted Lamb Shanks with Garlic and Rosemary Recipe

Ingredients:
🔸️4 lamb shanks
🔸️Salt and pepper
🔸️3 tablespoons olive oil
🔸️6 garlic cloves, peeled and halved
🔸️4 sprigs fresh rosemary

🔸️2 sprigs fresh thyme
🔸️1 cup chicken broth
🔸️Zest of 1 lemon
🔸️Fresh parsley, chopped (for garnish)

Instructions:
🔸️Preheat the oven to 180°C (350°F).
🔸️Season the lamb shanks with salt and pepper. Heat the olive oil in a large ovenproof roasting pan over medium-high heat. Sear the lamb shanks on all sides until browned
🔸️Add the garlic, rosemary, and thyme to the pan, nestling them around the lamb shanks.

🔸️Pour in the chicken broth and bring to a simmer. Cook for 2 minutes to reduce slightly.
🔸️Cover the pan tightly with foil and roast in the preheated oven for 2 hours.

🔸️ Remove the foil and continue roasting for an additional 30 minutes, basting occasionally with the pan juices, until the lamb is tender and golden.
🔸️ Serve with roasted vegetables or mashed potatoes, garnished with lemon zest and fresh parsley.
