Grilled Trout With Rice Recipe

Meet your new favourite dinner: Grilled Trout with Rice! 🐟🍚

Ingredients:
🔸️2 fresh Trout fillets
🔸️3 tbsp olive oil
🔸️1 tbsp lemon juice
🔸️2 garlic cloves
🔸️1 tsp dried thyme
🔸️Salt and pepper to taste
🔸️Lemon wedges
🔸️Fresh parsley (for garnish)
🔸️1 tbsp chopped coriander or spring onion (for garnish)
🔸️1 cup basmati or jasmine rice
🔸️2 cups water or vegetable stock


Instructions:
🔸️In a small bowl, mix olive oil, lemon juice, minced garlic, thyme, salt, and pepper.Rub the marinade all over the trout fillets and let them sit for 15–20 minutes in the fridge.
🔸️Rinse the rice under cold water until the water runs clear.
🔸️In a saucepan, bring water or stock to a boil. Add rice, salt, and butter/oil.
🔸️Lower the heat, cover, and simmer for 15 minutes or until the rice is cooked and fluffy. Set aside.
🔸️Heat a grill pan or outdoor grill over medium-high heat.
🔸️Place the marinated trout skin-side down and grill for 4–5 minutes. Flip and cook for another 3–4 minutes until the flesh flakes easily.
🔸️Fluff the rice with a fork and divide between plates. Top with grilled trout, garnish with fresh parsley, and serve with lemon wedges.
