Mutton Gosht Biryani

Ingredients:
🔸 1 kg mutton
🔸 2 cups basmati rice
🔸 3 large onions
🔸 2 large tomatoes
🔸 3–4 green chillies
🔸 2 tbsp ginger-garlic paste
🔸 1 cup yogurt
🔸 ½ cup fresh coriander
🔸 ½ cup mint leaves
🔸 2 tsp red chilli powder, garam masala
🔸 1 tsp turmeric powder, cumin seeds
🔸 4–5 cloves & cardamom pods, bay leaves
🔸 1 cinnamon stick
🔸 4 tbsp oil or ghee
🔸 Salt to taste

Instructions:
🔸 Soak basmati rice for 30 minutes.
🔸 Heat oil/ghee in a large pan; sauté cumin seeds, cloves, cardamom, cinnamon, and bay leaves until fragrant.
🔸 Add sliced onions, ginger-garlic paste and green chillies
🔸 Stir in tomatoes, red chilli, turmeric, and salt; cook until soft.
🔸 Add mutton and yogurt; cook 10–15 mins.
🔸 Add half of the coriander and mint; cover and cook on low heat until mutton is tender (40–45 mins).
🔸 Boil water separately; cook rice until 70% done; drain.
🔸 Layer rice over mutton; sprinkle remaining coriander, mint, and garam masala.
🔸 Cover tightly; cook on low heat (dum) 20–25 mins.
🔸 Serve hot with raita, salad, and pickles.
