Mutton Korma Recipe

Perfectly spiced and tender mutton cooked in a creamy, nutty sauce, garnished with crispy fried onions and fresh coriander.
Ingredients

🔸️ 1 kg mutton
🔸️ 2 large onions (finely sliced)
🔸️ 1 cup yogurt
🔸️ 2 tbsp ginger-garlic paste
🔸️3 tbsp vegetable oil
🔸️1/2 tsp turmeric powder
🔸️ 1 teaspoon red chili powder, coriander powder, cumin powder, garam masala powder
🔸️ 4-5 green cardamoms & cloves
🔸️ 1-inch cinnamon stick
🔸️ 2 bay leaves
🔸️ 1/2 cup fresh cream
🔸️ Salt
🔸️ Fresh coriander leaves
🔸️ 1/2 cup cashew nuts
🔸️ 1/4 cup almonds
🔸️ 2 tablespoons poppy seeds
🔸️ 1/2 cup fresh coconut (grated)
🔸️ 2-3 green chilies
🔸️ Water
Instructions:
🔸️ Soak the cashew nuts, almonds, and poppy seeds in warm water for 20-30 minutes
🔸️ Drain and blend with grated coconut and green chilies to a smooth paste using a little water as needed. Set aside
🔸️ In a large bowl, mix the mutton pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, coriander powder, and cumin powder
🔸️ Cover and let it marinate for at least 1 hour (or overnight in the refrigerator for best results)
🔸️ Heat oil or ghee in a heavy-bottomed pot or pressure cooker
🔸️ Add sliced onions and sauté until they turn golden brown
🔸️ Remove half of the onions and set them aside for garnish
🔸️ To the remaining onions, add green cardamoms, cloves, cinnamon stick, and bay leaves. Sauté for a few seconds until aromatic
🔸️ Add the marinated mutton and cook on high heat until the meat is browned and the oil starts to separate
🔸️ Add the prepared korma paste and mix well
🔸️ Add salt to taste and cook for 5-7 minutes, stirring occasionally
🔸️ Add 2 cups of water (adjust based on desired consistency), bring to a boil, and then reduce the heat to low
🔸️ Cover and simmer until the mutton is tender and the gravy thickens (about 45 minutes to 1 hour). If using a pressure cooker, cook for about 4-5 whistles on medium heat
🔸️ Once the mutton is cooked, add fresh cream and garam masala powder. Stir well and cook for another 5 minutes.
🔸️ Check seasoning and adjust salt if needed
🔸️ Garnish with the reserved fried onions and fresh coriander leaves
🔸️ Serve hot with naan, roti, or steamed rice
