Ingredients
• 500g Fresh Halal Bone-In Mutton Cubes
• 3 tbsp oil
• 2 large onions, finely sliced
• 2 tomatoes, finely chopped
• 1 tbsp ginger & garlic paste
• 2 green chillies, chopped
• 1 tsp cumin seeds
• 1 tsp cumin powder
• 1 tsp coriander powder
• ½ tsp turmeric
• 1½ tsp Kashmiri chilli powder
• ½ tsp garam masala
• ½ cup plain yoghurt
• 1 bay leaf
• 2–3 cardamom pods
• 1 cinnamon stick
• Salt to taste
• 1–1½ cups water
• Fresh coriander, to garnish
Method
- Heat oil in a large pan and add the bay leaf, cardamom, cinnamon and cumin seeds. Cook for 30 seconds.
- Add the sliced onions and cook until golden brown.
- Add the ginger & garlic paste and green chillies. Cook for 1–2 minutes.
- Add the chopped tomatoes and cook until softened.
- Add cumin powder, coriander powder, turmeric, Kashmiri chilli powder and salt. Mix well.
- Add the 500g Fresh Halal Bone-In Mutton Cubes and cook until the meat is well browned and coated in the spices.
- Lower the heat and stir in the yoghurt gradually. Cook for 2–3 minutes.
- Add 1–1½ cups of water, cover and simmer for 45–60 minutes, or until the mutton is tender. Stir occasionally and add a little more water if needed.
- Sprinkle with garam masala and fresh coriander.
- Serve hot with basmati rice, naan or roti. 🍚
