Ingredients

🔸️3 tablespoons tamarind paste

🔸️3 tablespoons fish sauce

🔸️3 tablespoons brown sugar

🔸️1 tablespoon soy sauce

🔸️1 teaspoon chili powder

🔸️200g (7 oz) rice noodles

🔸️2 tablespoons vegetable oil

🔸️3 cloves garlic, minced

🔸️2 shallots, thinly sliced

🔸️200g (7 oz) shrimp, peeled and deveined

🔸️2 eggs, lightly beaten

🔸️1 cup bean sprouts

🔸️1/2 cup crushed peanuts

🔸️1/4 cup chopped fresh cilantro

🔸️2 green onions, sliced

🔸️1 lime, cut into wedges

Instructions

🔸️In a small bowl, mix together tamarind paste, fish sauce, brown sugar, soy sauce, and chili powder. Adjust the sweetness or tanginess to your preference.

🔸️Cook the rice noodles according to package instructions until al dente. Drain and set aside

🔸️ Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat

🔸️ Add the shrimp and cook until pink and opaque, about 2-3 minutes. Remove from the pan and set aside

🔸️ In the same pan, add the remaining tablespoon of oil

🔸️ Add minced garlic and sliced shallots. Stir-fry until fragrant, about 1-2 minutes

🔸️ Push the garlic and shallots to the side of the pan

🔸️ Pour the beaten eggs into the pan and scramble until just set

🔸️ Add the cooked noodles to the pan and pour the prepared sauce over them

🔸️ Toss everything together to combine

🔸️ Add the cooked shrimp, bean sprouts, and half of the crushed peanuts. Toss to mix everything well and heat through

🔸️ Transfer the Pad Thai to serving plates

🔸️ Garnish with chopped cilantro, sliced green onions, the remaining crushed peanuts, and lime wedges on the side.
